Ah, les profiteroles

Otherwise known as dessert bliss. And I'm not exaggerating. I ate some yesterday. We had Easter lunch at a restaurant. I'm cooking an Easter meal today (Easter monday is a holiday here) and I really didn't feel like cooking two Easter-worthy meals in a row. So, we ate at a restaurant. I had beef carpaccio. Yes, the former vegetarian now eats raw meat. But it's just so good. With paper thin shavings of parmesan on top.

Anyway. For dessert I got profiteroles. Which is probably one of my favorite desserts of all time. And one that I never make. Ever. Because it seems like a pain, although that doesn't always stop me.

Want to know why it's my favorite? Because it's complicated and simple at the same time. It's hot and cold at the same time. It's chocolate and vanilla at the same time. It's crunchy and smooth at the same time. It's so many things at once and no one thing dominates or loses its integrity. You have to respect that in a dessert.

Three choux pastries -cut in half and filled with vanilla ice cream, a pond of melted dark chocolate for them to bathe in, grilled slivered almonds sprinkled over all, for fun.

Well, my wife being a profiterolles expert and aficionada, I can tell you from first-hand direct experience (assuming things have not changed and traditions remain...): you MUST have the profiterolles from Le Procope (in Paris--the famed 300-year old restaurant).

Could not possibly pick just one - in fact, it would be a crime to just pick one and leave all those other wonderful desserts hanging out to dry!

I actually missed this whole thing and am just now getting caught up. We are messed up in several bits over here though and although GWB probably isn't evil I am pretty sure The VP is..just sayin'..lol

Just a little useless trivia but I think I read that you have grown unacustomed to seeing people flying flags on homesteads. You know in my Part of the US a large percentage fly both sets of Flags still (including the Rebel Flag) and some even fly the state flag as well.

Back in the Day when I worked at the Queen Ann Bar and Grill we had Profiteroles on the menu. The running dumb joke was Can you find a profit in profiterole.

The profiterolles sound good to me. Although at the moment I'm also smitten with a chocolate covered caramel that is sprinkled with sea salt.

Hell, when I want something sweet, caramel corn will do.
